Australian Avocado Toast

Ingredients

  • 2 slices sourdough, or your favourite bread, toasted
  • ½ large ripe avocado
  • 1 zest and juice from 1/2 lemon
  • 1 small red chilli, sliced
  • fresh coriander or parsley leaves, torn
  • salt & pepper

Method

  • Smash avocado in a small bowl. Stir through lemon juice, chilli and herbs, season to taste with salt and pepper.
  • Spoon avocado over toast, serve immediately.

Tips

  • Fresh chilli can be replaced with a good pinch of chilli flakes or a drizzle of hot sauce.
  • Serve with soft boiled eggs, if you wish.
